Jennifer's Cheeseburger Soup

1 lb ground beef
1 green bell pepper, diced
1/2 onion, chopped
4 large potatoes, peeled and chopped
1 cup carrots, shredded
2 Tbsp butter
1 1/2 cups milk
2 cups 8oz velveta, cubed
4 cups chicken broth
2 tsp dried parsley
2 tsp dried basil
1/4 cup sour cream
Salt and pepper

In large pot brown beef, drain and set aside. In the same pot sauté the onion, carrots, bell pepper with butter, basil and parsley until they are tender, about 10 minutes. Add the broth, potatoes, and beef, bring to a boil. Then reduce heat, cover and simmer 15 minutes.
Stir in velveta cubes, milk, salt and pepper. Cook and stil until cheese is melted. Serve with a dallop of sour cream.

Yum! Such a good flavorful soup!

Steph's salad dressing

1/2 cup olive oil
1/4 cup red wine vinegar
2 Tbsp sherry vinegar
1 Tbsp Dijon mustard
1 tsp honey
1 tsp oregano
Salt & pepper

Cabbage Apple Slaw

This is the best thing you can make with cabbage! Very sweet and crunchy salad.

1/2 head of cabbage or 6ish cups, shredded
3-4 medium red apples, chopped
5 oz evaporated milk
1/4 cup lemon juice
2 Tbsp sugar
1 tsp celery seed
salt and pepper

In large bowl mix together the evaporated milk, lemon juice, sugar, celery seed and salt and pepper. Add chopped apples and stir until apples are coated. Then add shredded cabbage.

I honestly believe the secret ingredients is the celery seed, it just wouldn't be the same without it :-)

GF blueberry muffins

2 1/2 cups gf oats
1/2 cup sugar, or stevia
1 cup honey vanilla Greek yogurt
2 eggs
1 tsp baking soda
1 tsp lemon juice
1 cup frozen/fresh blueberries

Mix all ingredients in food processor except blueberries. Blend until creamy. Fill muffin liners 3/4 way full, top with a few blueberries, bake at 400 for 15-20 minutes.
Also yummy with strawberries, or probably any other fruit. Usually makes 12.
