~Dirt Dessert~


My husband has been asking me to make this for a couple years now, and I just now made it for his birthday dessert. Recipe from a good friend Lyn!

Process 1 package Oreo cookies in food processor until crumbs, set aside
Mix 2 small packages instant vanilla pudding, according to directions, set aside

Beat 2 tablespoons softened butter
1/2 cup sugar
8 oz softened cream cheese
Fold in 8 oz Cool Whip and the prepared pudding

In a trifle dish, layer crumbs then cream cheese mixture. Top with gummy worms if desired.

Panera's Broccoli Cheddar Soup

I love Fall, the leaves the colors and the cool breeze, and nothing says Fall more than a hot pot of soup on the stove, so I decided to start a little family tradition of Soup Saturday in our home for Fall and Winter. This was last weekends.

Panera Breads Broccoli Cheese Soup

1 tablespoon butter, melted
1/2 medium onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half
2 cupschicken stock or bouillon
1/2 pound fresh broccoli
1 cup carrots, julienned
salt and pepper to taste
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar


Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half (this is called making a roux). Add the chicken stock whisking all the time. Simmer for 20 minutes.

Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in small batches into blender and puree. Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg and serve

Very good tasting warm soup! Only thing is make sure you transfer small batches into the blender. Mine was only a little over halfway full and it blew the lid off as I was holding it down and blew soup all over my cupboards! I served it with warm french bread.

Spicy Beefy Enchiladas

One of my favorite things to make!

1.5 pounds lean hamburger
6 large tortillas
2 10oz cans Old El Paso enchilada sauce, I use medium
1 4oz can Ortega diced jalapenos, use half, you can use green chiles if you want less spicy
1/4 yellow onion, diced
around 4 cups shredded cheddar cheese

-brown hamburger with diced onion and jalapenos
-heat up tortillas in microwave for about 20 seconds, they are easier to roll warm
-set cheese in a bowl, (easy to get to)
-dump enchilada sauce into a pie plate, or wide shallow dish
-set out 9x13 baking dish
-set up line cause once you start rolling it gets messy
--slap both sides of each tortilla in the sauce
--load it with a few spoonfuls of beef and then cheese
--roll it up and do another
--dump remaining sauce over enchiladas
--top with desired amount of cheese

Bake at 375 20-30 minutes or until cheese is melted and sauce is bubbly!

This last time I added some spinach in each enchilada and it was really good! I had some frozen spinach, pulled out about 1 cup, let it thaw, then added a little to each one. One of those things where you are getting a serving of vegetables without knowing it!

Salmon Rice Casserole


Salmon is an odd one to have in a casserole but I make this same casserole with Tuna, and since my husband loves salmon so much I thought I might try it. Pretty tasty!

1 skinless salmon fillet
1 cup uncooked rice
1 red bell pepper
1/2 yellow squash
1/2 zucchini
some shredded cheese

I seasoned the salmon fillet with lemon pepper, garlic salt and some pampered chef citrus and basil, then pan seared it for about 7-8 minutes on each side on medium heat. I don't like fishy oily salmon so I overcook it a little so it's blackened on both sides. Once done flake apart with fork.
Cook rice accordingly
Clean and chop veggies

Mix together in casserole dish, top with shredded cheddar if desired
Bake at 350 for 20-25

Cupboard Pasta

My husband texted me and asked whats for lunch, ha..I replied with good question. Hadn't had time to make a grocery run that week yet so I threw together this. More of an inspiration recipe for last minute throw togethers.

Had a little bowtie pasta, enough for two
1 can SW Ready-Cut Tomatoes with garlic and oregano, not drained
1 can organic white chicken chunks in water, drain
1 mushroom, cleaned and sliced
1/2 of a zucchini diced up

Cook pasta, drain, put back in pot on med-low heat, add tomatoes, mushroom and zucchini. Let heat up long enough so zucchini isn't crunchy, 10 minutes.
Had really good flavors!

Spring Salad


I know everyone knows how to throw a salad together, but I always like to find new things to add to salad. Here is my favorite salad right now:

spring salad mix, alfalfa sprouts, avacado, cucumber, red onion topped with salt and pepper and a few sugar snap peas and strawberries on the side.

Chocolate Trifle


Decided I better try out my new trifle bowl! Found this recipe at allrecipes.com

1 package brownie mix
1 3.9 oz package instant chocolate pudding mix
1/2 cup water
1 14 oz can sweetened condensed milk
1 8 oz container frozen whipped topping, thawed
1 12 oz container frozen whipped topping, thawed
1 chocolate candy bar

~Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
~In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 oz whipped topping until there are no streaks
~In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving

Lemon Basil Chicken with Italian Potatoes


A friend gave me some fresh lemon basil that she grew in her garden....it smelled amazing! Not really knowing what to do with it I experimented and it was pretty tasty.

--Lemon Basil Chicken--
2 boneless skinless chicken breasts
1/4 cup sun dried tomato basil olive oil
1 tablespoon fresh lemon basil, chopped
lemon pepper seasoning

In a deep baking dish pour in olive oil
Add half of chopped lemon basil
Set the chicken in, then turn them over so both sides get oiled
Season with the remaining lemon basil and lemon pepper seasoning

Bake at 375 for 25-30 minutes, flipping halfway through. Overcooking will dry out the chicken.

--Italian Potatoes--
Drizzle olive oil on a baking sheet, dice 4 red potatoes and rub around in olive oil, sprinkle with oregano and garlic salt, bake at 375 for 25-35 minutes until fork tender.
Once done, dump in bowl and add a squirt of italian dressing and sprinkle with parmesan cheese. Stir and serve.

Vegetable Kabobs


I started working for this catering company every once in a while on weekends and we made these for a wedding. Although I didn't get to try them that day, I scurried to the store and bought everything to make them myself.

If you have metal skewers, great, if not you can buy the cheap wooden ones that need to soak in water for at least 24 hours. Or my dad made some out of metal hangers.

You can obviously use whatever veggies appeal to you that day in the store or:

1 orange bell pepper
2 mushrooms
1 zucchini
1 red onion
red bell pepper and yellow squash are great with this too

You will need a little dish with some melted butter or olive oil. A basting brush. And a little bowl with salt and pepper mixed.

Chop veggies up in chunks, and slide them on the skewers
Once you set it on the grill baste the skewer with butter and then sprinkle some spepper on it.
When veggies are getting a little black, soft smokey they are ready to flip, baste and sprinkle.

awesome blossom-blooming onion remake

This hit the spot goodness is from my mother in law Lou

Take one very large onion, peel, place on two sheets of tin foil, take a knife and cut 3/4of the way into the onion from the top, cut three different ways to split it up. Take a couple tablespoons of butter and rub it all around the outside and top of the onion. Dump a bunch of soy sauce down the center of the onion, you want the onion swimming in soy sauce. Wrap the tin foil up and around the onion. Place on grill for about 30 minutes. Dump in bowl and flake apart with fork.
*Great tasting easy grilling!

~the dip that gives you hips~

This amazing comfort food dip came from my good friend Angela

2 8oz packages cream cheese, softened
1 1/2 cups sour cream
1 cup grated parmesan cheese
1 4oz can green chiles, use half
2 jalapeno peppers, cleaned and chopped
1/2 cup bacon bits
shredded cheddar cheese for topping

--Mix all together in large bowl and bake at 350 for 20-30 minutes
--Top with cheddar and serve with tortilla chips

Veggie & Beef StirFry


1 pound sirloin steak
1 red bell pepper
1 zucchini
1 bundle asparagus
1-2 carrots
1/2 yellow onion
1 garlic clove
1/2 cup soy sauce
1-2 tablespoons Italian dressing
garlic salt
onion salt
onion powder
freshly ground black pepper

--it is easiest to cut steak when still partially frozen
--cut steak into thin strips, place in a good marinating dish/bowl
--dump in good amounts of the soy sauce, pepper, onion salt and garlic salt
--it is best to marinate for 24 hours but 6 or so will be just fine, stir and add more seasonings every few hours
--wash, peel, clean, cut, chop, mince, thinly slice all veggies
--in a large saute pan or wok brown meat on medium heat with marinade juices
--the beef will not stay tender if you cook over a high heat
--after meat is browned, add veggies to pan with beef
--cover and let steam, 15 minutes, carrots will take the longest
--when done you can stir in 1-2 tablespoons Italian dressing for more flavor

Italian Meatballs

I love love love spaghetti and my husband not so much, but he does if I make meatballs so this is my Italian Meatball recipe

1 pound lean ground beef
1 large egg
3/4 cup Progresso Italian Style bread crumbs
tiny pinch dried rosemary
freshly ground black pepper
salt
Pam Organic Olive Oil spray

Oven to 400

In a large bowl- lightly beat egg, add burger, bread crumbs, onion, garlic and seasonings
Mix well
Spray baking sheet with Pam
Mold meatballs and place on sheet
Bake for 13-15 minutes
Slice the thickest one open and check for pinkness

Make your noodles and sauce however you like!

2 pork chops
Worcestershire sauce
McCormick Montreal Steak seasoning
onion powder
garlic salt

--place pork chops in a greased baking dish
--cover both sides with lots of Worcestershire and seasonings
--let marinate in fridge for a couple hours, flipping once
--bake at 375 for 35 minutes (depending on thickness) flipping halfway through

*great juicy flavor*

Coconut Macaroons

I made these for a Bridal Shower and they were a huge hit! Delicious and loved!
The beautiful bride Kelsey on the right!


3 cups sweetened & shredded coconut
3/4 sugar
5 egg whites, lightly beatened (foamy but not quite stiff)
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract
8oz semi-sweet Bakers chocolate

---combine coconut, sugar, egg whites, vanilla and almond extract in medium bowl
---refrigerate 30 minutes until cold
---preheat oven to 300
---line a baking sheet with parchment paper, mold coconut mixture into 16 small rounded domes
---place on the baking sheet
---bake until golden brown 30 minutes, broil last minute to get the perfect golden color
---melt chocolate (after shutting off the oven but while it is still warm, we put the chocolate squares in a glass bowl and put them in the oven to melt)
---dip macaroon bottom in melted chocolate
---chill 1 hour in fridge

-parchement paper is not the same as wax paper, I learned this the hard way. They were just harder to pull off the wax paper after chilling :-)

Choc-Oat Cookies with Raw Honey


1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 1/4 cups brown sugar
1 cup (2 sticks) butter
1/4 cup raw honey
2 large eggs
2 tbs milk
2 tsp vanilla extract
2 1/2 cups Quaker Old Fashioned Oats
2 cups chocolate chips

--Combine flour, baking soda and salt in small bowl
--In a large mixing bowl beat melted butter, brown sugar and raw honey til creamy
--add in eggs, milk and vanilla, beat
--gradually mix in flour mixture
--dump in oats and chips, stir together

preheat oven to 350, bake 11-12 minutes for soft & chewey, cool and serve
*makes around 2 dozen*

Pretzel Turtles




Also for the baby boy shower I made these....big hit!

on a baking sheet lined with wax paper place a pretzel and then a rolo
bake at 350 for 2-4 minutes until chocolate is looking soft and glossy
remove from oven, push either m&m or pecan into the rolo, cool in fridge til chocolate is stiff
then make pretty with white chocolate (I use Bakers white chocolate)


I did green and blue m&m's for the baby shower, you can use whatever colors you want to coordinate with the party.
The colored ones are prettier but the pecan ones taste better!

Pretty Party Punch


I just hosted a baby shower for a Mops girlfriend that is having a baby boy and I made this terrific punch...


~2 liter 7up
~12oz lemonade concentrate, thawed
~1 orange
~1 lemon
~a few good looking strawberries

~in a large pitcher add ice, all of the 7up and about half of the lemonade concentrate, to taste
~leaving peel on, thinly slice orange and lemon
~remove top of strawberries and thinly slice them too, add fruit to punch
~Great taste for an easy punch!

Potato Salad Crunch


3 large russett potatoes, peeled 1 inch cubes
2 eggs, hard boiled and chopped
1 green bell pepper, cleaned and diced
1/4 yellow onion, chopped
1 stick celery, chopped
1 green onion, thinly sliced
1/2 cup mayo
1 tbs worchestershire
salt and pepper

--boil potatoes until a fork goes through one easily
--mix mayo, worchestershire, veggies and salt and pepper in large bowl
--run very cold water over potatoes until cold
--mix potatoes and eggs in with mixture
---chill in fridge for about 30 minutes
---top with green onions before serving
---the little bit of crunch is the best part!

Cork Board

Finally...... Thanks to my cousin Jessie, my mother in law Lou, my friend Jennifer, and many glasses of wine myself- my cork board is finally complete....ahhhh!

Brie-Jam-Pastry


My friend Mandy gave this wonderful recipe to me.....this is great with a glass of wine!

1 Pepperidge Farm Puff Pasty Sheet
Smuckers Raspberry Jam
1 wheel Brie cheese
Wheat Thins crackers

--let the puff pastry sheet and brie cheese soften on counter at room temp for about 3o minutes
--preheat oven to 350
--once you can mold the sheet without tearing it, open it up and lay it on an ungreased baking sheet
--cut excess white stuff off the brie
--cut the brie wheel in half the long way so you have two wheels
--spread jam between the two wheels and on the top of them, place on the puff pastry sheet
--mold puff pastry sheet around and over the brie
--bake for 20-30 minutes- checking often....mine often oozes jam

This is good for breakfast or appetizer with wine
Serve with wheat thins

all about the veggies


this mixture is great for chips and dip or wraps....we used this with some cooked chopped chicken and rolled it up in a whole wheat tortilla for our picnic in Yellowstone. Worked perfectly!

15 oz can black beans, rinsed and drained
15 oz can corn, rinsed and drained
1 cucumber, peeled and chopped
2 carrots, peeled and chopped
2 green bell peppers, cleaned and chopped
1/2 onion, chopped
1/2 cup olive oil
1/4 white vinegar
2 tbs fresh lemon juice
4 garlic cloves, chopped
1/2 tbs cumin
1/2 tbs pepper
1/2 tbs chili powder

I cooked 1 boneless skinless chicken breast in olive oil, paprika, cumin, garlic powder and onion powder, then chopped it up. Or serve with tortilla chips as a dip.

--this makes a huge portion

Spinach Mushroom Penne


-a light meatless meal-

1 box Barilla penne
1 cup frozen chopped spinach
1 mushroom
1 jar Bertolli Organic Olive Oil and Garlic
1 tbs olive oil
salt and pepper
crumbled feta cheese

cook penne according to package
steam or saute frozen spinach and sliced mushroom in olive oil, season with salt and pepper
mix cooked pasta, veggies and sauce together, let simmer a few minutes to get warm
serve sprinkled with feta cheese

Taco Salad


1 pound lean ground beef
4 ounces hunts tomato sauce
1 tablespoon taco seasoning
2 teaspoons chili powder
2 leaves romaine, chopped
1 avocado, slice-peel-dice
salsa
sour cream
shredded cheddar
white corn tortilla chips

---brown meat in skillet over medium high heat
---season meat while browning, add tomato sauce
---everyone I know piles it diffently---
*makes 2 large salads*

Poppy Parfait


--vanilla yogurt
--poppy seeds
--strawberries (you can also add blueberries, mango, blackberries, raspberries, banana....anything you like)
--squeeze fresh lemon juice

---layer in a glass---
*great simple dessert*

Fishtastic Tacos


I've never made nor had fish tacos but these were soooo amazing! Just the perfect flavor and spice....I couldn't believe I created this!

2 teaspoons cumin
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
Pam organic olive oil cooking spray
1 lemon
1-2 avocados, diced
3 romaine leaves, chopped
feta cheese, crumbled
Tabasco green chile sauce
4-6 tortillas (whole wheat, flour, corn)
2 Tilapia fillets (I think any white fish will do fine)

--Heat oven to 425
--mix seasonings together
--spray baking dish with Pam
--set fish in dish
--sprinkle fish with seasoning mixture
--bake at 425 for 17-20 minutes
--flake with fork
--warm up tortillas

Layer:
tortilla, fish, fresh lemon juice, avocado, feta cheese, romaine, tabasco

Roll up and savor....yuummmmmh

Lemon Pepper Salmon Salad


---just tossed this together for lunch---

1 salmon fillet
1 avacado
1/2 cucumber
2 carrots
6-8 romaine leaves
3 cloves garlic
1/2 lemon
lemon pepper seasoning
olive oil

--heat olive oil in skillet over medium high heat
--rub lemon pepper seasoning on salmon fillet and cook for 5-7 minutes on each side (until blackened)
--peel, dice, slice, mince, chop the romaine, avacado, cucumber, carrots and garlic
--once salmon is cooked, flake with a fork, add to salad
--squeeze fresh lemon juice over salad
--salt and pepper to taste

--Serves 2
---Great Salad!!!

Spicy Chicken Chili


My cousin Jessie made this up, and it is fantastic!







1 boneless skinless chicken breast(2 cups), cooked and shredded
2-3 cups chicken broth
1 can white navy beans, rinse and drained
1 tablespoon olive oil
1/4 yellow onion, diced
1 green bell pepper, diced
1 cup frozen corn
2 teaspoons chili powder
2 teaspoons cayenne pepper
garlic powder
salt and pepper, to taste
shredded cheddar for serving

--heat olive oil in large pot
--saute onion and green bell pepper
--add chicken broth, bring to a boil
--add seasonings, corn, navy beans, chicken
--simmer 20 minutes

*serve with shredded cheddar

Beefy Quesadillas

~Fiesta~

olive oil
3 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon taco seasoning
1 pound lean ground hamburger
salt and pepper
4 10" flour tortillas
2 cups shredded cheddar
salsa and sour cream, for serving

--heat the olive oil in a large skillet over medium high
--add the minced garlic and chili powder, cook 2 minutes
--add beef, salt, pepper and taco seasoning, cook until browned
--heat large skillet over medium heat for tortillas
--rub olive oil on one side of tortilla and place oiled side down in skillet
--spread 1/2 cup of shredded cheddar on tortilla
--when cheese is melted, spoon beef mixture on half of tortilla
--fold tortilla into half-moon
--cook until quesadilla is crisp

Makes 4 quesadillas
Serve with salsa and sour cream

I made guacamole as a side

Venison Bacon Beer Roast

2 pound venison roast
1 guinness draught beer
4-6 slices bacon
salt
pepper
onion salt
garlic salt
oregano

--place roast in baking dish
--rub seasonings into roast
--lay bacon strips over roast and secure with toothpicks
--dump guinness in with roast
--cover tightly with tin foil

*Bake 350 for 2 1/2 hours, until no longer pink
(about an hour for each pound of meat)

Roasted Peppered Carrots


Ok, so I always wrap stuff up in tin foil and throw it on the grill....well we are out of propane and haven't filled back up....SO

--I took some whole carrots, peeled, sliced in half and wrapped them up in tin foil with some olive oil, freshly ground pepper, salt and onion powder and roasted them in the oven at 425 for about 30 minutes.

*Awesome flavor with a pepper kick!

You can also do this with zucchini or asparagus but instead of olive oil I use a couple slivers of butter.

21 Spiced Chicken

So I bought this awesome seasoning at Costco and it is fantastic on chicken. If you can find it great...if not this is what it consists of:
Kirkland Signature Organic No Salt Seasoning
Blend of 21 spices
All Organic: onion, garlic, carrot, black pepper, red bell pepper, tomato granules, orange peel, parsley, bay leaves, thyme, basil, celery, lemon peel, oregano, savory, mustard seed, cumin, marjoram, coriander, cayenne pepper, citric acid and rosemary


-two boneless skinless chicken breast halves
-dijon mustard
-seasoning mixture
-olive oil

--Put some olive oil in the bottom of a baking dish
--smother both sides of chicken with dijon mustard
--sprinkle with seasoning mixture

---Bake at 425 for 30 minutes
---Cut in half, make sure there is no pink but still a little juicy

*Such great flavor!

Chicken a la Diabla

Breaded slightly spicy chicken...amazing!

1 cup dijon mustard (or as needed)
1 teaspoon cayenne pepper
2 eggs, beaten
4 boneless skinless chicken breast halves
1-2 cups dry breadcrumbs (I got Progresso Italian Style)
3 tablespoon butter

*preheat oven to 375

Melt the butter in a baking dish. In a small bowl, mix together the mustard and cayenne pepper. Brush the mustard onto the chicken and then dip the chicken in eggs and then dredge in the breadcrumbs. Place chicken in baking dish and bake for 30-40 minutes, turning once half way in between. Cut in half and check for pinkness.

Lebanese Salad

My favorite salad...

--3-4 tablespoons olive oil
--1/4 teaspoon sea salt
--3-4 garlic cloves, minced
--1 cucumber, quartered and diced
--1-3 avacados (depending on size and how much you love them)
--cherry tomatoes (I don't add these but you can)
--juice of half a lemon
--romaine, diced

In a salad bowl mix ingredients in order

Raspberry Shortbread Cookies


a friend just shared this wonderful shortbread cookie recipe with me and I loved it!







--Mix
2/3 cup sugar
1 cup softened butter
1/2 teaspoon almond extract until creamy
then add 2 cups flour and mix

--Roll mixture into 1" balls and make thumbprint in top
--Fill thumbprint with Smuckers preserves (raspberry or strawberry)
--Bake at 350 for 14-18 minutes

--Mix
1 cup powdered sugar
1 1/2 teaspoons almond extract
2-3 teaspoons water, or until creamy
--Drizzle baked cookies with mixture and serve

Blueberry Lemon Muffins


2 1/2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1/8 teaspoon salt
1/2 cup (1 stick) butter
1 cup milk
2 large eggs
1 tablespoon grated lemon zest
1/2 teaspoon vanilla extract
1 1/2 cups fresh blueberries
1/4 cup brown sugar

*preheat oven to 425

--whisk flour, sugar, baking powder and salt together
--melt butter- whisk milk, eggs, lemon zest and vanilla with butter
--make a small well in dry ingredients and pour in wet ingredients
--stir with a wooden spoon until moistened but still lumpy
--gently stir in blueberries
--pour into liners to the top
--sprinkle with brown sugar

*reduce oven temp to 375, bake for 25 minutes (toothpick test)

***fluffy & yummy***

Ultimate Omelet

breakfast for two...

6 large eggs
salt & pepper
sandwich ziploc bags

-Add-Ins- (optional)
shredded cheddar
diced ham
crumbled bacon
diced bell pepper (I like red and green)
onion
tomatoes
olives

In a medium mixing bowl whisk together eggs, salt, pepper, and any desired add-ins.

The best way to get the egg mixture into the sandwich sized ziploc is to set the bag inside of a glass liquid measuring cup and using a ladle scoop and pour about 1-2 cups in each bag.
Then bring a large pot of water to boil and drop the sealed omelet bags into the water and simmer for 5-8 minutes.
Remove bags with tongs
Open and drop onto a plate.

These are so different to make than regular omelets, but fun and delicious.

*I like to serve these with green salsa and orange slices.

Tuna Bell Pepper Casserole

So this is just like Stuffed Bell Peppers but in casserole form- I randomly thought of doing this when I wanted Tuna Stuffed Bell Peppers for dinner but only had one pepper.

1-2 red bell peppers
3/4 cup uncooked long grain rice
1 can tuna
1 tablespoon sesame oil
pepper, garlic salt and onion powder
1 cup shredded cheese

--cook rice accordingly
--clean and chop bell peppers
--mix tuna, rice, peppers, sesame oil, seasonings and half of cheese together in casserole dish
--top with remaing cheese
--bake at 350 for 20-25 minutes

Bambi Steak & Potatoes

-This is one of the best venison recipes I have made so far-

2-3 pounds venison steak
3 tablespoons flour
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1 teaspoon salt
1/4 teaspoon pepper
1/4 butter
1/3 cup red wine
1 onion, sliced
3-4 carrots
3 potatoes, sliced

--cut meat into serving-size pieces
--mix flour with garlic salt, celery salt, salt and pepper
--dredge meat in flour mixture
--brown well on both sides in butter over medium heat
--add wine; cover and simmer 20 minutes
--place steaks in a shallow baking dish (9x13)
--top steaks with sliced onions, potatoes and carrots
--pour reserved wine broth over steaks
--cover tightly with foil
--bake at 300 for 2-2 1/2 hours

*After an hour of baking check it to see if it needs more moisture, add 1 cup of water if it looks like it is getting dry.
